Casa alle Vacche is a family-run winery. For several generations, the Ciappi family has been committed to enhancing the products of their territory, not only wine, but also extremely high quality oil. Of the total 28 hectares of winery property, 25 are dedicated to the cultivation of vines, while the remaining 3 hectares are occupied by olive groves. Casa alle Vacche is completing the process of converting to organic agricolture. In the vineyard, it applies the principles and uses the techniques of integrated agriculture.

One of the buildings that make up the cellar was a stable for oxen, essential for working the land. Over the years, the structure has been modernized. In any case, the link with tradition is very close, its agricultural vocation is historical, dating back to the nineteenth century, and its family, local, genuine and authentic nature is inherent in this winery.

The winery is located in the municipality of San Gimignano, in the province of Siena, one of the most suitable, famous and well-known areas of viticulture and enology in Tuscany. Among the main appellations of this area are Vernaccia di San Gimignano and Chianti Colli Senesi, one of the seven sub-areas of Chianti D.O.C.G. The winery's flagship wines are a Vernaccia, the Vernaccia di San Gimignano D.O.C.G. I Macchioni, and the Chianti Classico Colli Senesi.

This wine is made predominantly from Sangiovese grapes, with a percentage of approximately 90% (for Chianti Colli Senesi the minimum percentage of Sangiovese is 75%). The remaining 10% is reserved for grapes from three other autochthonous black grape varieties of Chianti: Canaiolo, Colorino and Ciliegiolo. These vines are grown in ideal pedoclimatic areas, on clayey soils at an altitude between 210 and 280 meters above sea level. The grapes are selected manually, so as to use only the best bunches for winemaking.

The production process is the classic red winemaking method, with alcoholic fermentation and maceration at a controlled temperature. Before being put on the market, this Chianti ages in the bottle for approximately 1 month.

The Chianti Colli Senesi D.O.C.G. Casa alle Vacche 2022 is a wine with a lively and brilliant ruby red color. On the nose it is vinous, fruity, with the typical hint of blackberry, with the classic hint of violet and with a slight almond sensation that we perceive, with greater strength, on the finish. The taste is balanced and elegant, with good flavor and roundness, slightly tannic, with medium body, structure and alcohol content (13% vol.). The finish, as mentioned, is of good persistence with notes reminiscent of almond.

A very versatile wine. Perfect with first courses with meat sauces, with tasty soups, with medium/high-structured meat second courses and with not too mature cheeses.
