When our online wine sales website was founded, we wanted to introduce wine lovers to the most hidden and less known pearls of the Italian wine scene. Wines of enormous value and great quality that do not enjoy the same notoriety as the great national denominations.

The wine of today’s review falls into this category. It is produced with an ancient method, typical of the Chianti area, once widespread and then fallen into disuse due to the affirmation of the various local denominations, but that some winery continues to enhance to keep alive the tradition and allow fans to enjoy a wine "as it was once done".

Castellare di Castellina is a winery founded in the 70s thanks to Paolo Panerai, publisher and winemaker, through the union of four estates located in the Chianti Classico area (Castellare, Caselle, San Niccolò and Le Case). The winery wants to combine tradition and innovation, in order to provide wine lovers with a range of products that can tell the story and the evolution of this extraordinary territory. Castellare di Castellina has benefited from the collaboration of the University of Milan, led by Professor Attilio Scienza, of the University of Florence and of the valuable advice of winemaker Emile Peynaud, who introduced the correct use of barrique.

Castellare di Castellina has about 80 hectares of land, 33 of which are dedicated to viticulture, in the area of Castellina in Chianti (Siena). The main vine of this area, Sangiovese, is the most cultivated and variously interpreted to produce different versions of Chianti Classico D.O.C.G., the basis of the main Castellare di Castellina wines. Among the wines produced there is also a famous Supertuscan, "I Sodi di San Niccolò", the first Italian wine in the Top 100 Wine Spectator in 1988. Among the international varieties are cultivated Merlot, Cabernet Sauvignon, Chardonnay and Sauvignon Blanc.

The winery philosophy that, as we have written, aims to preserve the local tradition has led to the choice of still producing a wine using the "Metodo Governo". It is a practice, codified by Bettino Ricasoli, the founder of Chianti Classico, for a long time at the base of the production of Chianti red wines, then abandoned to focus on techniques capable of giving life to more structured wines, with greater commercial success. Wines produced with the "Metodo Governo", in fact, are characterized by a remarkable freshness, result of the refermentation to which they are subjected, through the addition of dried grapes coming from autochthonous vines.

Governo di Castellare di Castellare di Castellina is made from Sangiovese, Canaiolo and Malvasia Nera grapes. After the first fermentation, to the wine are added dried grapes, which lead to the second fermentation, which characterizes this practice and which gives the wine greater freshness and a slight liveliness. The vinification, with malolactic fermentation, is carried out in steel, while the aging in cement tanks, for about 4 months, followed by 2 months in bottle.

Governo di Castellare Toscana I.G.T. Castellare di Castellina 2021 is a ruby red wine with evident violet reflections. To the nose we perceive a bouquet of floral aromas, with intense notes of iris, locally called "giaggiolo" (also represented on the wine label). The palate is fresh and slightly sparkling, lively. It is a very balanced wine because supported by a good structure and a good roundness. The finish is quite persistent, with floral scents that characterize the whole tasting.

In our opinion, it is a perfect wine with cured meats. We also serve it with second courses of white meat or, slightly fresh, with important fish dishes.
