Sauvignon Hofstätter
Sauvignon is an international grape variety that prefers areas with a fairly cool climate, such as the one that can be found in the Loire Valley, in France, or in Friuli Venezia Giulia and in Trentino Alto Adige, the Italian regions where it is cultivated with greatest success. These climatic conditions are fundamental for the development of that acidic note, which gives freshness and pleasantness, distinctive organoleptic trait of Sauvignon wines.
For this reason, we have selected an Italian Sauvignon of excellent quality from a winery known worldwide for the production of the great white wines of Alto Adige. We are talking about Tenuta J.Hofstätter. Below, we present its Sauvignon Vigneti delle Dolomiti I.G.T. 2021.

Located in the heart of Termeno, in the province of Bolzano, Tenuta J.Hofstätter has been cultivating vines on both sides of the Adige valley for over a century. Founded by Josef Hofstätter in 1907, today it is led by Martin Foradori Hofstätter, who carries on a family tradition that has reached the fourth generation.
Since 1992, the estate has experienced a phase of modernization and expansion of the property that now covers areas both on the eastern and western slopes of the Adige Valley, including the areas of the Valle dei Ronchi, in South Trentino, in addition to the slopes of the Saar, in Germany, where Hofstätter produces its Riesling. Among the most important estates that characterize the company there are the Kolbenhof Estate of Termeno, a favorite place for the cultivation of Gewürztraminer; Steinraffler Estate, where the grapes of Lagrein, the autochthonous black grape of Trentino Alto Adige, are grown, in an area with a particular microclimate influenced by the breezes coming from the Garda Lake; the Mazon plateau, in the eastern part of the Adige Valley, where there are vineyards dedicated to Pinot Noir; the Oberkerschbaum Estate for Sauvignon and "Maso Michei" for Chardonnay and Pinot Noir.
The cultivated vines are international ones, that have found a second "home" in Trentino Alto Adige, and local-autochthonous varieties. Hofstätter wines include a wide range of solutions, closely linked to their territory of origin and, also for this reason, with a quality that has few rivals.
The Sauvignon Vigneti delle Dolomiti I.G.T. J.Hofstätter fits perfectly into this area of excellence. After the harvest, the Sauvignon grapes are lightly pressed. The skins are put in contact with the must for a short time, about 8 hours. Once the must is separated from the solid residues, the fermentation is carried out at a controlled temperature. Then, the winery follows the classic vinification process for the production of white wines.

Sauvignon Hofstätter 2021 has a straw yellow color with slight greenish reflections. On the nose we find the typical and distinctive aromatic sensations of Sauvignon grapes: vegetal and herbaceous notes, pepper, gooseberry, nettle and sambuca, enriched with fruity hints of black currant. On the palate we find great vivacity and freshness, enhanced by that acidic vein that only in Sauvignon is so pleasant and balanced. Body and structure are important, with a strong alcohol content (13% vol.). The finish is long and persistent.
For character and structure, a white wine that goes well with white meat or tasty and important fish dishes. It is also very valid as a prestigious pre-dinner aperitif.
