Cherchi winery was founded in 1970 by Giovanni Cherchi, one of the most important and influential figures of Italian enology, starting from two hectares of vineyards on the very well-known hills of Usini. Since then, Giovanni, known as "Billia", has carried out a process of valorization of local vines and Sardinian wine production that has made his winery famous worldwide.
Today, Azienda Vinicola Cherchi has about 30 hectares of vineyards, most of which are dedicated to the cultivation of 3 iconic Sardinian vines: 60% of the vineyards are dedicated to the cultivation of Vermentino, 35% to Cagnulari, a rare autochthonous black grape, rediscovered by Giovanni Cherchi, and the remaining 5% is dedicated to the Cannonau. Cherchi wines are all produced from these grapes, either alone or through a blend or a combination of them, as in the case of Luzzana, from Cannonau (50%) and Cagnulari (50%).
The hills of Usini are calcareous-clayey and are located about 200 meters above sea level. The geographical position of this locality favors the full development of the aromatic potential of the grapes. The sea breezes coming from the coast and reaching the vineyards thanks to the short distance from the sea, mitigating the climate, and the temperature variations between day and night, which allow a proper ripening of the grapes, are very important.
In this context the Vermentino grapes are cultivated at the base of the "Tuvaoes", the name of the vineyard where the grapes grow. "Tuvaoes" derives from "tuva", "chalk" in the Sardinian language, and "oes", that is "oxen". This is because in the area where today is located this vineyard, once there was a chalk quarry, whose products were transported to Usini thanks to special carts pulled by oxen. 100% Vermentino, this wine is made from 1987. During the harvest, conducted in the second decade of September, the Vermentino grapes are carefully selected to collect only the best. The fermentation takes place at a controlled temperature of 17/18°C.

Vermentino di Sardegna D.O.C. "Tuvaoes" Cherchi 2021 has a straw yellow color with light greenish reflections. The aromatic bouquet is well defined, delicate and elegant: floral, vegetable and herbaceous scents are perceived. Specifically, we perceived hints of wildflowers and tomato leaf. In the mouth it shows a fresh acidity and a pleasing sapidity, within a vigorous structure, a soft body and an important alcoholic component (14% vol.). The finish is also floral, intense and persistent, with a slight bitter note.
In our opinion, it is a wine for an important and elegant aperitif, for tasty fish dishes and is perfect for grilled fish.
