This Recioto is made with corvina, corvinone, rondinella and oseleta grapes picked during the last ten days of September from the hilly "Le Novaje" vineyard located 280-300 meters above sea level in Novaia, Marano di Valpolicella (Verona). Grapes undergo a natural over-ripening in a traditional hilly cellar (400 meters above sea level) for about 4 months. This wine ages for 18 months in barrique and 6 months in bottle. The colour is deep garnet red with purplish hue. It shows an intense perfume, fruity when young, with hints of red fruit and underbrush, violet, iris, spices, coffee and bitter chocolate. It has a good alcoholic taste and a wonderful structure. The sugar residue gives a sweet, velvety, warm and extremely intense taste with a very long aromatic persistence with evident hints of jam and vanilla. Contains sulphites. Novaia is located in one of the most suggestive and luxurious areas of Alta Valpolicella, on the top of a gentle and sunny hill and on the left of the Marano Valley. At Novaia they adopt century-old traditions passed down over the years: already in 1908 the Modern Industrial Fair of the city of Verona awarded Paolo Vaona the Grand Prix and Gold Medal Diploma for the wines he produced. Today Cesare and Gianpaolo Vaona, with their sons, perpetuate his ancient tradition. The winery is run according to modern and yet ancient and traditional winemaking techniques, vineyards have been replanted to valoryze the tipical varieties and and many studies concerning drying grapes have been made.

All types of cheese, even hard and mature, excellent with fresh and creamy goat cheese, pastries in general, all types of biscuits (wonderful with Cantucci or typical Italian carnival Frappe), baked cakes in general and fruit tarts. Excellent on strawberries or sliced peaches. A wonderful "meditation wine" to enjoy alone. The cuisine of Veneto recommends "Imbriagon al Recioto" (Monte Veronese cheese aged in Recioto marc), "Pissota", "Spongè", "Conse", "Nadalin", "Pandoro", "Fritole e Sosole", "Brasadele", "Sbrisolona", "Recioto ice-cream/sorbet".
How to serve it
The wine should be served at 16-18 degrees centigrade. The best glasses to use are clear, transparent crystal goblets.
How to keep
When well preserved it can enhance all its features till seven years following vintage. It is advisable to store bottles horizontally in a cool and dark place with constant humidity and temperature.
