Vino Nobile di Montepulciano, which has been produced for centuries, is one of the rarest and most valued wines in Italy. The area in which it is produced can be narrowed down to a small tract of land with a highly individualized wine-making industry, uniquely adapted to the geographical and climatic conditions of the area. It is this that counts for the quality of the wine produced. As dictated by the nature of the grapevines, production is limited to a maximum of 80 hundred kilos per hectare, and only a maximum of 65% of the original yield remains after a period of ageing of at least two years in wooden barrels. Every part of the production process has to be carried out under the jurisdiction of a specially elected committee, members of which are nominated by the Ministry of Agriculture. It is only after the wine has passed rigorous chemical and organic tests that it can be called Vino Nobile di Montepulciano and gain the recognition of D.O.C.G. This wine is the valued result of the careful and exclusive selection of Prugnolo Gentile variety grapes, and it is matured in small oak barrels for at least 30 months in the cellars of the ancient Padri Serviti monastery, which nestles under the church of Santa Maria dei Servi in Montepulciano. The wine has a grainy red colour, and a fine but intense aroma, with a distinct hint of shrinking violets. The taste is dry with light tannins. Contains sulphites. The producer
The Gattavecchi family have been producing wine in Montepulciano for five generations, and have played a significant role among the historical companies that introduced Vino Nobile di Montepulciano to Italy and the world at large. Gattavecchi wines originate from vineyards located on the best hillsides in the administrative area of Montepulciano and San Gimignano. This means that the company is in a position to select the very best grapes, not only for the famous Vino Nobile di Montepulciano, but also for the production of a splendid Vernaccia di San Gimignano and certain dessert wines, such as Vin Santo. Gattavecchi wines are refined in casks and barrels in the historical underground cellars of the twelfth century Padri Serviti monastery, which nestles beneath the church of Santa Maria dei Servi in Montepulciano. Members of the Gattavecchi family personally concern themselves with the production of their wines. Under the supervision of Valente Gattavecchi, the sons and daughters, Luca, Gionata and Daniela closely follow every phase of the production process step by step. It is a job that, above all, is motivated by a love of the land, a passion for wine, and a desire to work alongside friends, colleagues and customers, some of whom are now spread throughout the world.

This wine is a very good accompaniment for roast and grilled meat, game and mature cheeses. It is also good to drink on its own.
How to serve it
The wine should be served at 18 - 20 degrees centigrade in clear, transparent crystal goblets. The bottle should be opened two hours before serving.
How to keep
If kept well, this wine has an average conservation period of eight to ten years. The bottles should be laid horizontally in a cool, dark, humid wine-cellar.
