This wine, that recalls the mature fruit pulp and the sun, is obtained from Chardonnay grapes, harvested manually as the ancient tradition and directly taken to the stalk remove. The must is cooled at 8 °C and pressed immediately. To complete the productive process follows the maceration, the fermentation and the settling, that takes place 80% in stainless steel vats and 20% in new French oak barrels. The wine ages in stainless steel vats for about 9 months, in French oak barrels for about 3 months and settles in bottles for about 5/6 months before reaching the market. This is a wine complex at the nose, with almond, apricot and rue aroma following one another, with a taut palate, mineral and citric, at the same time fresh and persistent, that doesn’t let down the expectations created by the olfactory examination. The producer
The Paolo and Noemia d’Amico’s Company, located in the suggestive Vaiano’s Valley, between the striking clay ravines and bordering with Lazio and Umbria, reflects in its whole the beauty of the surrounding landscape, either from the aesthetical point of view that for the quality of the wine produced. The ambitious project of Paolo and Noemia d’Amico, to offer wines that, together with the elegance of important grape varieties as the Chardonnay, Merlot and Pinot Noir, had the capability to exalt the potentiality of this terroir, started at the end of the 80’s and has nowadays become a reality with deserved success. The vineyards are extended over the Umbria area, that produces a pleasant and equilibrate D.O.C. Orvieto, type of wine that, , is narrated, was demanded by Pinturicchio as part of his remuneration for his paintings at the Orvieto’s Cathedral. The excellence of the d’Amico’s wine increased more and more through the years and today this company represents an important reality in the Italian enological context.
