Grown exclusively in the Kastelaz site above Tramin, where the variety originated, at an altitude of 300 meters above sea level. Vines are planted on a very steep slope with narrow terraces, trained on the guyot trellising system at a density of 7000 plants per hectare. The soils are a mixture of chalk and clay and the vineyard has been a classic Gewürztraminer site for generations. Very carefully selected, fully ripe grapes are picked in two harvests. Before pressing, the crushed berries are cold macerated for 6 hours, after which the juice is clarified by refrigeration and natural sedimentation. Fermentation is activated using selected yeasts and the temperature is controlled at 20°C. The young wine remains on its lees for several months. It has a full, deep golden yellow color, an intense bouquet of roses and exotic fruits, reminiscent of cinnamon and clove. It is full-bodied and rich on the palate, fruity and smooth on the finish, very persistent. Contains sulphites. The producer
Elena Walch is in charge of a company with vineyards that can be undoubtedly considered among the most beautiful in Alto Adige. The company is located in the former Jesuit monastery, owned by the Walch family since 1869, in Termeno (a small village 30 km from Bolzano). The town of Termeno is well known for its white wines, but especially for its Gewürztraminer (which is said to be born in this place). The estates of Elena Walch overlook Lake Caldaro and are divided into Castel Ringberg and Kastelaz. Their beautiful location is a major contributor to the high quality of the wines produced here.

It should be served at 11-13 degrees Celsius. The perfect glass is a clear, smooth and colorless crystal, goblet.
